Steamed fished head with diced red pepper is called motherland painted with red color as well. It was recorded that its background was related to a Huang Zongxian- a scholar who rebelled Qing Dynasty. According to the legend, during Yongzheng Emperor period of Qing Dynasty, in order to escape from the “literary inquisition”, Huang Zongxian fled to a small village of Yizhang county and lived in a local villager’s home. The family was too poor to buy food, but the son of the family got a fish for dinner at one night. The hostess boiled the fish body to soup and beamed the fish head with some diced pepper as another dish. This dish left special impression on Huang Zongxian’s mind. After coming back home, he asked his chef to improve the dish and it became one of the most famous dishes of Hunan province named as “beamed fish with diced peppers”
